- Arugula
- Dried cranberries
- Lemon
- Sugar
- Toasted pine nuts
- Cubed cooked chicken breast
- Wash and dry the arugula.
- Marinate the dried cranberries in the zest and juice of a lemon.
- Pour dressing over arugula and toss. Let sit for 30 minutes or so to soak up dressing.
- Top with toasted pine nuts and cooked chicken.
