Mom’s Sausage Hash Brown Muffins

  • 8 large eggs
  • 1/2 package refrigerated hash brown
  • 8 oz. package of shredded cheddar or pepper jack cheese
  • 1 package cooked maple sausage diced
  • 5 scallions, trimmed of roots and finely sliced (white and green parts)
  1. Preheat the oven to 400 degrees.
  2. Coat 12 muffin cups with cooking spray.
  3. Crack the eggs into a big bowl. Whisk until smooth.
  4. Add the hash browns, cheese, sausage, and onions to the eggs. Stir.
  5. Fill each muffin cup up 2/3 full of mixture.
  6. Sprinkle each cup with salt and pepper.
  7. Bake them for 15-20 minutes or until the eggs are set.
