- 8 large eggs
- 1/2 package refrigerated hash brown
- 8 oz. package of shredded cheddar or pepper jack cheese
- 1 package cooked maple sausage diced
- 5 scallions, trimmed of roots and finely sliced (white and green parts)
- Preheat the oven to 400 degrees.
- Coat 12 muffin cups with cooking spray.
- Crack the eggs into a big bowl. Whisk until smooth.
- Add the hash browns, cheese, sausage, and onions to the eggs. Stir.
- Fill each muffin cup up 2/3 full of mixture.
- Sprinkle each cup with salt and pepper.
- Bake them for 15-20 minutes or until the eggs are set.
