- 6 peppers (green, yellow, red, or orange)
- 2 lbs. of ground turkey (or ground beef)
- 1 small diced onion
- 1 can of diced stewed tomatoes
- 1 tbsp. of olive oil
- 1 small can of tomato paste
- Shredded Parmesan cheese (or grated)
- *Spices to taste: salt, pepper, onion powder, garlic powder, Italian seasonings
- Preheat the oven to 375 degrees.
- Cook ground turkey/beef, with the diced onion and 1 tbsp. of olive oil.
- Once cooked thoroughly add the can of diced stewed tomatoes and tomato paste. Add spices to taste.
- Let simmer for 15 minutes. (Taste the mixture as you go and add more spices to your liking.)
- While the meat mixture simmers, cut the tops off the peppers. Be sure to rinse out any excess seeds.
- Fill peppers with mixture and place in a baking pan.
- Sprinkle Parmesan cheese on the top of each pepper and bake for 25 minutes.
