Grandpa Len’s Lemon Thyme Salmon

  • 4 (6 to 8 ounce) boneless salmon fillets, skin on
  • zest of one lemon
  • 1 lemon quartered
  • 1 Tablespoon chopped fresh Thyme
  • 1 1/2 Tablespoons olive oil
  • salt and pepper
  1. Preheat oven to 275 degrees. Line a rimmed baking sheet with aluminum foil and brush with 1/2 tablespoon oil.
  2. Place salmon skin side down on the baking sheet.
  3. Mix remaining oil, thyme, and lemon zest in a small bowl.
  4. Spread the mixture over the salmon, dividing equally. Season with salt and pepper.
  5. Let stand 10 minutes to allow flavors to marry.
  6. Bake salmon until just opaque in center, 15-18 minutes. Serve with lemon wedges.
