Aunt Phyllis’ Chinese Orange Beef

for the slow cooker or stove top
  • 2 lb. cubed beef stew meat
  • ½ cup teriyaki sauce
  • ½ cup orange marmalade
  • 1 tsp. minced garlic
  • 1 tsp. fresh ginger
  • 1 red pepper, cut in ½-inch thick strips
  • 6 oz. snow peas, strings removed
  • 4 scallions, thinly sliced
  • Sesame seeds, optional
  1. Add beef, teriyaki sauce, orange marmalade, garlic and ginger to slow cooker.

2. Cover and cook on low 8 to 10 hours until beef is tender.

3. Turn to high. Stir in pepper strips and snow peas; cover and cook on high for 10 minutes until vegetables are crisp-tender.

4. Top with scallions and/or sesame seeds if desired.

5. Serve over rice.

*I usually cook this on the stove top for several hours instead of using the slow cooker.  Add pepper and snow peas during the last ½ hour.
