Jessica’s Favorite Sweet Potato Casserole

From Recipes of the Century Cookbook

  • 3 or 4 cups sweet potatoes (or 1 large or 2 small cans cut sweet potatoes)
  • 1 cup sugar (I use less)
  • 1 egg
  • ½ stick butter or margarine
  • 1 tablespoon vanilla

Heat sweet potatoes to boil and cook them until soft. Then drain and mash.  Cream the potatoes with sugar, egg, butter and vanilla.  Mix for 2 minutes. Pour in greased casserole dish.

Topping:

  • 1 cup brown sugar
  • 1/2 stick melted butter
  • 1 cup chopped pecans (optional)
  • ½ cup flour
  • Marshmallows (optional)

Mix ingredients (except marshmallows) together. Spread over top of sweet potatoes. Bake at 350 degrees for 30-40 minutes or until brown.

Another optional topping:

After initial baking, add marshmallows. Broil a few minutes until brown.
