Aunt Phyllis’ Irish Soda Bread

  • 9 cups flour
  • 1 stick butter or margarine
  • 2 t. salt
  • 2 t. baking soda
  • 2 t. baking powder
  • 1-1/2 cup sugar
  • 3 large eggs
  • 1 qt. buttermilk (4 C.)
  • Raisins (optional)

Bread

  1. Combine dry ingredients.
  2. Cut in butter.
  3. Beat eggs; add to buttermilk.
  4. Combine all.
  5. Add raisins.
  6. Grease and flour bread pans (3-4)
  7. Bake 350 degrees for 1 hour

Frosting

  • ½ cup sugar
  • 2 tablespoons water
  1. Bring to a boil.
  2. Glaze over baked bread while hot.
