Mom’s Country Ham Casserole

  • butter, for buttering the baking dish
  • 3 slices of country white bread, cut into cubes
  • 6 eggs
  • 3/4 cup heavy cream
  • 4 oz. shredded cheddar cheese
  • 1 cup cubed cooked ham
  • 1/2 milk
  • 4 scallions
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon paprika
  1. Preheat oven to 350 degrees.
  2. Trim scallions of roots and finely slice. Separate white and green parts
  3. Butter a pie dish. Spread out bread cubes around the dish.
  4. In a large bowl, beat to combine the eggs, heavy cream, cheese, ham, milk, white scallions, salt, and pepper. Pour into pie dish over bread cubes.
  5. Sprinkle paprika on top.
  6. Cook for 45 -60 minutes until firm. Sprinkle with green scallions and serve.

Notes: For company, double recipe and put in large baking dish. Good to make the night before. Cover and refrigerate. Add extra time to cook.
