- 1 1/2 cups chopped broccoli, cooked
- 6 large eggs
- 8 ounces shredded cheddar cheese
- 2/3 cup milk
- 5 scallions, trimmed of roots and finely sliced (white and green parts)
- 1 unbaked pie shell
- Sprinkle of paprika, salt, and pepper
- Preheat the oven to 350 degrees.
- Steam the broccoli until bright green and tender.
- In a large bowl, whisk eggs until smooth.
- Add the cheese, milk, scallions, and broccoli. Stir until blended.
- Pour into the pie crust. Sprinkle with paprika, salt, and pepper.
- Bake in center of oven for 40 minutes, or until solid in the center when slightly shaken.
- Cool on rack for 15 minutes.
