- 3 large russet potatoes, scrubbed clean and cut into thick wedges
- ½ cup olive oil
and
- ½ c balsamic vinegar
- 1 tablespoon salt
- 2 teaspoons fresh rosemary
- Freshly ground black pepper
- ½ cup grated Parmesan cheese
or
- 2 teaspoon Italian seasoning or Mrs. Dashes Seasoning
- Salt and pepper
- Preheat the oven to 450 degrees F.
- In a large bowl or bag, combine your choice of ingredients.
- Toss or shake the potato wedges with the mixture and spread them in one even layer on two baking dishes.
- Roast the potatoes, turning over once, until golden brown and cooked through, about 20 minutes.
