- 6 medium russet potatoes
- 1/3 cup finely chopped sweet onion -Vidalia or yellow
- 1 stick melted butter
- 1 cup sour cream
- 4 cups cheese (I use pepper jack but you could use regular cheddar)
- salt/pepper to taste
- Peel and cut potatoes into 1 inch cubes and put into salted water- boil until tender but still firm
- Drain and pour into large mixing bowl.
- Mix in all ingredients mentioned above and put into a buttered casserole dish
- Sprinkle on a bit more cheese over top and bake at 350 for approx. 30 minutes or until top is lightly browned and bubbly.
