Aunt Therese’s Cheesy Potatoes

  • 6 medium russet potatoes
  • 1/3 cup finely chopped sweet onion -Vidalia or yellow
  • 1 stick melted butter
  • 1 cup sour cream
  • 4 cups cheese (I use pepper jack but you could use regular cheddar)
  • salt/pepper to taste
  1. Peel and cut potatoes into 1 inch cubes and put into salted water- boil until tender but still firm
  2. Drain and pour into large mixing bowl.
  3. Mix in all ingredients mentioned above and put into a buttered casserole dish
  4. Sprinkle on a bit more cheese over top and bake at 350 for approx. 30 minutes or until top is lightly browned and bubbly.
