Aunt Bev’s “Gooey” Butter Cake

  • 1 box (17 oz.) pound cake mix
  • ½ cup butter, melted (1 stick)
  • 4 eggs
  • 1 package (8 oz.) cream cheese
  • ½ teaspoon vanilla extract
  • 1 box (1 pound) confectioners powdered sugar
  • 1 box chopped nuts
  1. Combine cake mix, butter and 2 eggs, stirring until well blended. Beat 1 minute. Spread batter in greased 13 by 9-inch baking pan.
  2. Beat cream cheese with electric mixer until light and fluffy. Beat in remaining 2 eggs, then vanilla.
  3. Set aside ½ cup confectioners powdered sugar. Beat in remaining powdered sugar.
  4. Pour evenly over batter in pan. Sprinkle with nuts.
  5. Bake at 350 degrees for 35 to 45 minutes, or until cake pulls away from the side.
  6. Cooked cake should cool in 20 minutes. Sprinkle with powdered sugar.
