
- 2 boxes frozen chopped spinach, cooked, drained, and squeezed dry.
- 2 cups Herb stuffing (Pepperidge farms, blue bag is best!)
- 1 very small onion – sauteed in butter until golden or even caramelized
- 4 eggs beaten
- ½ cup melted butter
- ½ cup grated Parmesan
- ¼ tsp salt
- ½ tsp garlic powder
- ½ tsp thyme
- Combine all and roll into 1 inch balls.
- Bake at 15 minutes @ 350 degrees until slightly brown on the bottom.
