Aunt Kristin’s Spinach Balls

  •  2 boxes frozen chopped spinach, cooked, drained, and squeezed dry.
  • 2 cups Herb stuffing (Pepperidge farms, blue bag is best!)
  • 1 very small onion – sauteed in butter until golden or even caramelized
  • 4 eggs beaten
  • ½ cup melted butter
  • ½ cup grated Parmesan
  • ¼ tsp salt
  • ½ tsp garlic powder
  • ½ tsp thyme
  1. Combine all and roll into 1 inch balls. 
  2. Bake at 15 minutes @ 350 degrees until slightly brown on the bottom.
