Mom’s Broccoli Cheese Quiche

  • 1 1/2 cups chopped broccoli, cooked
  • 6 large eggs
  • 8 ounces shredded cheddar cheese
  • 2/3 cup milk
  • 5 scallions, trimmed of roots and finely sliced (white and green parts)
  • 1 unbaked pie shell
  • Sprinkle of paprika, salt, and pepper
  1. Preheat the oven to 350 degrees.
  2. Steam the broccoli until bright green and tender.
  3. In a large bowl, whisk eggs until smooth.
  4. Add the cheese, milk, scallions, and broccoli. Stir until blended.
  5. Pour into the pie crust. Sprinkle with paprika, salt, and pepper.
  6. Bake in center of oven for 40 minutes, or until solid in the center when slightly shaken.
  7. Cool on rack for 15 minutes.
