Arugula Salad with Cranberry Lemon Dressing

  • Arugula
  • Dried cranberries
  • Lemon
  • Sugar
  • Toasted pine nuts
  • Cubed cooked chicken breast
  1. Wash and dry the arugula.
  2. Marinate the dried cranberries in the zest and juice of a lemon.
  3. Pour dressing over arugula and toss. Let sit for 30 minutes or so to soak up dressing.
  4. Top with toasted pine nuts and cooked chicken.
